Quince

I've got 4 small quinces that I'd like to use up with dinner tonight, which is tail end salmon fillet!

Any ideas?

    Quince is a little tart and sweet, so I think it could work in this recipe:

    That sounds like a classic case of premature extrapolation.

  • Quince mixes very well with apple. Peel, remove core and slice with cooking apple, for fruit sauce or to make typical pudding e.g. in pie, sponge or crumble, or stewed and served with cream. It makes a thick, grainy sauce, nice sweetened with a little honey, cinnamon sprinkled on top.

    If you ever need to use up more than four, make quince jelly or jam, or it freezes well when stewed.

    I made up a fruit sauce in the end, with some fresh grated ginger, dessert spoon of sugar and a dash of lemon juice.

    It was lovely with the salmon, took the richness off.

    I've kept the little bit of sauce left and will add it into our fruit smoothies on Monday.
